Yes, any T61 can take 2x4=8GB RAM (pc2-5300 or pc2-6400).
But to use 8GB, you also need to install a 64-bit OS.

mSATA drives can be put in the WWAN-slot of older machines.
Drives like these come in different shapes and sizes: mSATA and several M.2 and are not interchangeable!
T430/T530 need mSATA.

No, their lids are all one-solid-part.
Correction:
the X200/X201 lids (with 1280x800 LCDs, with webcam) have a similar 'split' lid as on X220/X230
the X200s/X201s lids (with 1440x900 LCDs, without webcam) are all one-solid-part.

If you say/think that the only difference is in the power supply, why not try swapping them (Mexico vs US)?
If the (finished) CPU-update works with the swapped-in Mexican PSU, then that Mex-PSU might prevent a CPU-update but is otherwise fine.
Worst case, get another 3-pin PSU for it.

xx10 and xx20 keyboards all have the same dimensions and are interchangeable.
And the X220 KB-bezel perfectly fits on the X230.

That LP125WH2-SLT2 LCD is mostly used in Lenovo S230U Twist, with a touch-screen.
I have one of those (without touch-screen) in my X230 since 2016, works perfect.
