I'd recommend shelling out a bit more for 2*1 GB RAM and an upgraded graphics card... maybe a 7600 or something. I have a feeling OS X is not going to like integrated graphics. I'm not too worried about OS X not liking the GMA950 as both the mac mini and the MacBook have that chipset. Maybe at some...

You don't have to; it's really a matter of personal preference. If it's too hot for you, use one. If not, don't worry about it.

Any 2.5" PATA notebook drive ought to work. The favorite for the hot rodders around here is the Hitachi Travelstar 7K100, but you will see a significant performance boost with any 7200rpm drive (or 5400rpm for that matter).
