First I would like to say I am sorry if I am over complicating something for myself or not thinking clearly.
After doing some researching into upgrading my t40's ram I've come to understand I need 200-Pin DDR SO-DIMM and I should go for at least PC2700 but higher PC#### would be backwards compatible. I guess my question comes down to if 2 certain pieces of ram I've looked at will work.
CORSAIR 1GB 200-Pin DDR SO-DIMM DDR 400 (PC 3200) Laptop Memory Model VS1GSDS400
Kingston ValueRAM 1GB 200-Pin DDR SO-DIMM DDR 333 (PC 2700) Laptop Memory Model KVR333X64SC25/1G
If they won't work with the t40 could you recommend one that does work? Or if they do work and you've had experience with either one which would you recommend?

Welcome to the Forum.
Your T40 requires PC2100 Sodimms, but will also work with PC2700.
Do not use PC3200, that's too much for that machine.
PC2700 is cheaper and more of it available, and will work very well.
You need 200-pin SODIMMs, as you stated correctly.
As long as they are not the so-called ValueRAM modules, any other ones will do, up to a max. of 2 x 1GB.
Recommended modules include Crucial, Elpida, Samsung and Micron

Their site said it should be compatible and the price isn't too bad so I'll get 2x1gb and update my post on how it turns out.
