I don't have that hardware but I'd expect KF to be pretty slow even at minimum resolution. If you do find it acceptable you can look at other games on the same engine (Unreal Engine 2.5). UT2004 is a pretty good game for older GPUs. Battlefield 2 might be OK; mostly an MP game but I did a lot of SP on it too, especially with the AI-X mod (see battlefieldsingleplayer forum).
Current Thinkpads:
X31, X40, X61T, X61, X201, X220 (i7 IPS), W520 (2720QM/2000M/FHD), T440p (i7-4800MQ/GF730GT/FHD)
Dells: Latitude C840, Precision M70, Precision M4400, M6400 (WUXGA), M6600, M6700
Daily driver: Dell XPS 13 w/Kaby Lake+Iris Pro+TB3

Guess what, KF is playable with everything at Norma, Simple Shadows and 2X antialasing. The FPS goes from 30 to 50.
Here are some Screenshots with FPS. I will still keep tweaking the game.

List of games that I play with friends on a regular basis:

Worms Armageddon - OK on your laptop, definitely.
Halo Custom Edition(addon for Combat Evolved for PC) - OK
Call of Duty 4 - Should run alright, may need to run it on lower settings, Anti-aliasing off
Call of Duty World at War - Same as COD4, but even lower settings.
Supreme Commander, Forged Alliance - Should run ok, but run on lowest res(1024x768) and don't run background CPU programs.
Command & Conquer Generals - Zero Hour - OK
Flatout 2 - OK
Source Engine Games: (Portal 1, Half-Life 2, EP1, EP2, Garry's Mod) - OK
Portal 2 - will run, but lowest settings.
Minecraft (I play a modpack called Robbit, based off Tekkit for multiplayer) - Will require no smooth lighting, graphics on fast and Normal or lower viewing distance.
Project 64 (Nintendo 64 Emulator) - You'll have no problems running most games.
Dolphin (Gamecube/Wii Emulator) - Don't take any confidence in most games. You'll be running on lowest settings, DirectX 9.
Trying my hardest to collect Thinkpads, but college and being broke kinda gets in the way. However...

Republic Commando (first person shooter, good game!) was another I played on my T60. Ran fine. Seems to me I installed Halo 2 on my T60 but it didn't run the greatest. Never tweaked anything so some of that could have helped. Oh and lots of Minecraft too

Minecraft actually runs better than it normally would, especially on the T60p, because the ATI cards have a lot of VRAM for their day, and Minecraft abuses VRAM like nothing else. Also good to upgrade your T60 to the maximum 3.5 GB RAM, not just because Minecraft really needs that too, but for any sort of gaming. At least have 2GB RAM handy. Any less than that and most of the games I've listed above will have a hard time.

My son recently acquired a T60 with X1400 / T2500 / 3GB Ram / X25M SSD and really wants to play Minecraft on it. I've tried turning graphics to fast, and lowering the smooth lighting setting, but performance is very hit and miss. One moment it'll be 30+ fps, then all of a sudden it will crawl along at 3fps or less for 2-5 seconds. Does anyone know what causes that and how I could improve the lagging?

Also, I briefly looked at installing the Optifine modpack, but it seemed a little complicated, was not available for the latest version (1.7.2), and I was unsure if it would bring incompatibility issues with multiplayer servers (especially if we'll need to revert to 1.6.4)??? He'll want to be able to play whichever server his friend happens to be playing on. Appreciate any advice.

That's a common issue with Minecraft- it's usually associated with low amounts of pre-allocated RAM. The computer lags because it uses up RAM space, and then garbage collection maxes out the CPU and steals precious processing power from Minecraft. The way to fix this is to allocate more RAM to Minecraft, there should be an option that allows a choice in the launcher. 1GB is good.

Optifine is strictly a clientside mod, so if it's applied, you can still join regular Minecraft servers. A 1.7 version of Optifine won't be out for some time because 1.7 completely changed how mods work. But if you can apply Optifine, it is 100% worth it.

Well.. The X1400 should be able to run the most important games. No need to upgrade anything

Half-Life 2 (Thus Counter strike Source, Portal etc.)
Company of Heroes
Civilization V
Thinkpad W500 (2.53 GHz P8700, 4 GB RAM, FireGL V5700, WUXGA)
Thinkpad T61F 14" (2.53 GHz QX9300, 6 GB RAM, Quadro FX570m 256 MB, SXGA). Advanced dock with AMD Radeon HD7750
Custom build ITX desktop (i5 4590, 8GB RAM, AMD R7 260X, custom watercooling)
Thinkpad 8, Fujitsu F-07C

I just got a copy of the original 'Left 4 Dead' PC version for a great price (free) and was wondering if anyone has had success yet running this game on a T60 / ATI X1400 ?

I'm pretty sure you'll have no problem running it. I've ran the original Portal with few issues on the T60, and it ran just fine, It's an early source engine game, like L4D.
