Is it possible to fit an mSATA disk in a ThinkPad T60 or T61?

Only by using an adapter enclosure in your main bay or ultrabay. The mini PCI-E slots on xx10 and earlier series don't support the standard.

Which is the first ThinkPad which does support the standard?

T420, X220, T520, W520. Basically, "true" Thinkpads (this excludes the Edge and the X100/120/130/140 series) with Sandy Bridge processors.
