I've read a lot of things about the different manufacturers of T60 keyboards...is it possible to know which keyboard we'll get before buying a specific T60 model?

All the keybords in the thinkpads are from very good kwality it doesn´t matter wich one you have..

Maybe they're all good, but based on pics I have seen on this forum, it's weird to get keyboards with different mechanisms for a same model

I mean, it's not identical keyboards manufactured by different companies but simply different keyboards. Is it exact?

There are three different keyboard manufacturers (though...last I heard it is unclear if the third is still suppling). They are all good. I have the Chicony, which is considered by many to be the "worst"...it's still better than any laptop keyboard on any other brand. Plus, Thinkpads are very end-user serviceable. I use my laptop a lot, so in 2 years time the lettering will wear off, and I'll just order either hte Alps or NMB one (NMB is considered the best, but it's uncertain if they still supply last I heard).
T60 2007-7JU (15" Flexview, has a T60p mobo for the v5200, 4gb ram, changed HDD w/7200rpm 100gb, T7400 2.16ghz Core 2 Duo)
