According to lenovo's return policy, there needs to be atleast 11 defective pixels to qualify for a return.

You don't specify if it is a dead pixel or a stuck pixel. Dead pixel nothing can be done, but you can try programs like Dead Pixel Buddy (google for it) to make the stuck pixels go away. But sometimes, even this might not work. Search the forum for this issue and you'll find a number of posts discussing this.

What would you guys do? Am I just picki or whould you guy send it back as well? Trying to figure out what to do since I don't really want to pay the restoking fee and don't know how long I would have to wait for a new one!

That's the TN technology. It wouldn't happen on IPS panel. You might try some of apps to restore stuck pixels, like JScreenFix for example.

Like gator said I don't think that is enough to get a replacement, but if i could get a new i would for sure send it back.
In Norway where i live everything bought on the internet can be returned within 14 days without any reason if you don't want it. That is a law over here so i buy all the LCD products on the internet and check them carefully for the first 14 days. I never had any pixel errors though.
