Will DDR3 be function able in current T61s?

no.   DDR3 SODIMMs will use 1.5V input and the santa rosa architecture in the T61/p is 1.8V.   besides, even if it was supported, santa rosa is limited to 667MHz and anything faster will be downclocked so it really wouldn't matter.

DDR3 support won't happen until the T62/p.

Memory speed on Core 2 Duos doesn't help very much anyway.

Why you may ask? 2 reasons

1) C2Ds have REALLY LARGE caches (in comparison, historically) - this means that the more commonly used bits of data are right there on the CPU for immediate access, negating a great deal of the benefit of fast memory.
2) C2Ds have REALLY efficient prefecters (the logic units in a CPU that "guess" what data is going to be needed next and load it into cache before it is actually requested to be used by the CPU).
