T61 Vista Can I create Dual Boot with Restore Disk?

Yesterday ordered a Thinkpad T61 (2.2ghz 800FSB 4MB L2, 3GIGS DDR, 100GB 7200 1GB HD Cache thingy, Vista Home Premium). I bought this laptop to run a CPU and Memory Intensive Simulator.
I plan on uninstalling the trialware, optimizing Vista by configuring it for best performance and turning off unnecessary windows serivices so I can squeeze all the power out for the Simulator. I picked Vista because I think Readyboast and Readydrive will help with the Simulator.
Today I was thinking that if I could create a dual boot (2 Vista's) setup. I could get one instance as a normal PC and the other for the Simulator with very aggresive optimizations (No Antivirus), all IBM goodies uninstalled. Then I'll be able to retire my T42 thats seen duty in IRAQ.
Can I created another instance of Vista with it's own partition with the Thinkpad restore disks? Or will I have to buy another copy of Vista?
