What's the Best OS and Ware for a Tablet?

I'm an R,T and X TP user along with TBs (Toughbooks). I just got a Fujitsu P1015D tablet.
It's a Pentium-M with the 900, is it, chipset. Pardon my memory, I haven't slept for 24+ hours.

What OSes are possible? Which is "best"?
What ware and apps would you suggest?

This model has a touch screen, not an active digitizer, i.e. the screen only responds to the pen when it's touching, not hovering.
