I have an older Ipod that has a Toshiba MK2004GAL hard drive that's a 1.8 inch, 44-pin IDE type. Specs from Toshiba can be found here:

Can this drive be used in the X40? If so, is it a straight plug in or will I need an adapter of some sort.

I won't claim to know anything about those ipod drives, but looking at the pdf, I see it's 44-pin connector is female, and standard IDE hard drives have male connectors. So it definitely won't be a staight plug in situtation.
Plus the connector pins are along the long side of the drive, and it appears that the connector is on the short side of this Toshiba. So, while there may be an adapter available, I'm not aware of one.

I have used a drive from iPod Mini with a CF adapter (same connector) and it worked fine, just not too fast (3600 rpm drive and only 4GB) but I needed the laptop to get running until a replacement HDD arrived.

That drive won't be a good idea. First, as Neil pointed out, it has a female connector. And even if you get a male/female adapter, the drive won't fit in the bay and part of it would stick out of the X40.
But there are other iPod models that fit nicely. Most of them (if not all) have a ZIF connector. Check my old post here for a list of drives that will work. If you are patient enough you may get a cheap one in Ebay or alikes...
