Has there been any anomalies after the 8GB upgrade? And most importantly, what brand to buy?
Any X61 will take 8 Gb of DDR-2.
If you want to keep an X61 at least semi-current these days, I would consider it an essential upgrade.
Be forewarned, not nearly as cheap though as the DDR-3 for post-X61 Thinkpads.
The Crucial 8 GB kit comes to mind, if you need a part number I can dig it up.

RAM: avoid any so-called "Value-RAM".
DDR2-6400/PC2-800 SO-DIMMs run slightly cooler than DDR2-5300/PC2-667.
Preferably get 2Rx8 sticks (printed on them somewhere).
Get a matching pair from Hynix, Micron, Samsung, Elpida, Axiom, etc.
