What is different between the X60 and X60 "S"? I know that the "S" has an UltraLight LCD as an option, but it's not universal across the line (at least not according to TABook).

Is the only other difference a smaller battery & fan, and low voltage CPU? Does the S get a longer runtime than the standard version?

The X60s is 0.15 lbs lighter than the X60 even when identical batteries are used. The X60s can use the slim line battery but the X60 can't, which further allows the X60s to lose another 0.1 lbs. And like you said, the X60s has the ultralight LCD option, which is 0.2 lbs lighter than the regular LCD. Combining all these weight-saving features, the lightest X60s weighs 0.45 lbs less than the lightest X60, 2.7 lbs vs. 3.15 lbs.

However, the X60 is more powerful than the X60s.

X60s is using Low Voltage Processor,
if battery is your main option, you might choose this.

nice post Pianowizard.

and the x60t is listed as 3.8 lbs, and so that makes a big difference when compared with the x60s's 'light' configuration.
