I don't plan to upgrade, just curious.
I can't tell you the difference in the X61s, because there I "only" have 4GB. I can tell you about my desktop, however, which I did upgrade to 8GB.
In normal day to day work, the difference is zero compared to 4GB. Right now my system uses 1.7GB, so even 2GB would be enough.
Obviously, you need to start using RAM to see any sort of performance improvement, for example:
- Do photo tagging with Adobe Lightroom, and at the same time keep Adobe Photoshop and Nikon Capture open, possibly with a number of image files loaded.
- Use a number of virtual machines in parallel (via e.g. VMWare Workstation), and give each of them 1-2GB of memory.
- Heavy duty software development, with an appserver running in the background, a UML tool open, possibly even a target debugging environment running inside VMWare etc.
The trouble is: Most of these things I cannot do with an XGA screen anyway, so probably anything more than 4GB does not make sense at the moment.

P.S. I have a very handy tool running in the sidebar of Vista called "Core Meter": It shows me constantly the RAM used and the load of the CPU cores.
