I am waiting for a still-under-warranty X60 Tablet that I purchased recently.
The screen is a standard XGA tablet screen (non-multitouch).
If I upgrade the screen, will that void my warranty? If so, how can I upgrade the screen and keep it under warranty?

Yes.

Have a certified Lenovo lab do it, and pay lots of $$$ for them to do it (not sure they even offer this as a service). Or just hope that you will never have to have it serviced for something screen-related, and they won't care/notice when they servicing it for something else (and they often really don't).
