I want to replace my venerable old T40 with an X60 or X61: what's the difference?
I intend to use the new machine for coffeehouse and patio duty (I use a T60 in the house at home).
And, just out of curiosity, what are the X60s and X60p?

Practically not much from a performance and design perspective. You'll get a newer CPU and chipset/GPU with the X61 along with the ability to use 4GB of memory. Supposedly the X60 runs a bit quieter.

No such thing as X60p. X60t would be the tablet version.
X60s utilizes a low-voltage CPU for better battery life, the same goes for X61s.
Some of these have "ultralight" LCDs which are quite nice.
Also, stereo recording has been disabled on X61/s/T generation, if this is of any concern to you.
Certain X61 units with wireless "n" cards have a tendency of running very hot, to the point of palmrest becoming untouchable. Machines that left the factory with WWAN have two fans and generally do not suffer from this issue, or at least not to the extent previously described.
At today's prices, my pick would be X60/s/T, which gives a lot of bang for one's buck IMHO.
