To Dual Boot or to VMware?

Would it be better to install W7 and VMware to run an Ubuntu machine and any other OS/Machine or should I just dual boot W7 and Ubuntu in my Core Duo X60s?

Given that you are limited to 3GB of memory I would probably just dual-boot. Virtualization means you need enough memory for the host OS as well as the virtual machine guest OS. Do you expect to need to switch between the OSes frequently? If your linux needs are fairly basic you might look at running Cygwin on Windows; I use the GNU text utilities this way all the time.

If you run Ubuntu from VMWare - what kind of stuff would you be doing on it?

Internet, ripping/burning CD/DVD, office suite, testing/scanning software

Testing trialware and alternate OSes. Testing win progs in Linux.
Scanning for viruses.
Scanning discs for quality of burn.
