Lets say Mac OSX 86 gets installed on any of these non-tablet, touch / multi touch machines...
Would they be capable of touch based usage... ?

I guess so ... I don't see why it wouldn't work ... even Genuine Apple Software Update can be fooled by a good hackintosh so why not this software !

Moreover, on X60/X61 Tablet we use TabletMagic but it doesn't seem to be compatible with this touchscreen ...
