I want to hook up two lcd monitors that only have vga connections to the mini dock 3. There is a dvi-d, a vga, and display port out of the dock. I have read you can use any of the two in combination. Would buying a dvi-d to vga adapter allow me to hook up both my monitors to the docking station?

There is no such thing as a DVI-D to VGA adapter. Only DVI-A/DVI-I which carry analog signals can be adapted to VGA.
There is no way for you to hook up both these monitors without an active converter.

This may work. There is a review there by a person who did something very similar to what you are trying to achieve, successfully.

If you are looking go from DVI to VGA you need an active digital to analog converter. You can check KVMSwitchTech's DVI-D to VGA
converter units( Part # SCA-DVI-ANA).
