I'm coming from a T60 w/xp. I have to admit that I enjoy the simplicity of the T60 restore discs that allow me to rebuild a drive without a lot of work.
I want to eventually move up to a T4/5XX series, and want to avoid the vista thing and go straight to W7. What series did it start at where W7 COA's came with the laptops?

The first serie that came with W7 preinstalled was 2009s T/R/W/X x00. Be aware that some units - epsecially those manufactured in early 2009 - may come with Vista license anyway.

I have the T410 preinstalled with Win7 Pro, and we also were able to ask Lenovo to provide us with Product Recovery Disks for Win7 Pro as well.
==> ***Can someone correct me if I'm wrong, but I think any Thinkpad computer with Windows 8 / Windows 10 pre-installed does note use the Product Recovery Disk method. This is because you must supply your own 8+ GB USB Thumbstick, then use the Thinkpad Recover Partition to create a bootable Recovery USB Thumbstick to reinstall Win dows 8 / Windows 10.
ie: Any system with Windows 7 preinstalled from Lenovo would use the Product Recovery Disks method.
ie: MUCH harder to find: if you also find anyone with Lenovo supplied Windows 7 downgrade rights from Windows 8 and (very briefly) Windows 10, that computer can also have Win7 Product Recovery Disks from Lenovo (either under warranty, or bought if after warranty expired).
For example, Our X1C3 (X1 Carbon Generation 3) bought in Jan 2016 came with Win10 Pro, and we also acquired from Thinkpad the Win7 Pro downgrade rights.
So we could (and did) obtain Product Recovery Disks from Thinkpad for our X1C3, which came preinstalled with Win 10 Pro!
You are right; we also prefer Product Recovery Disks as well!
Good luck!
