Ok, new problem (is this what I get for using Vista?)
As far as I know, I haven't done anything wrt my video settings (automatic updates?), but I restarted my T500 and I had some annoying resolution issues at the login screen, and now some Intel Graphics Media Accelerator Driver for Mobile is in charge of my graphics. When I go to CCC I get "ati catalyst control center cannot be started because the currently active gpu is not supported." I guess I should have suspected something would go wrong since whenever I went to my display options before this happened, it would always show 4 monitors when all I was using was the laptop display.
In my old T4x (running XP) I never had any issues like this. I tried running 7vd541ww.exe (correctly - ran the downloaded file, then found the setup file) from the Lenovo Support & download site, but it didn't fix anything. I'm a bit at a loss here as I typically take graphics things for granted and I just want the nice control center that I'm used to back. Any thoughts?

Re: CCC no longer in control of my graphics
Cannot open ATI Catalyst Control Center. CCC has been replaced by Intel Graphics Media Accelerator Driver. It started today (7/20) as soon as I installed Windows Updates. I tried doing a system restore and it wouldn't work. I cannot access the CCC control panel nor can I run multiple monitors.
Is there a fix?

Ok ... so it's not a bug. It's a feature. I guess just an ID ten T error, or ignorance on my part. Under the battery options, you just need to choose "High performance" instead of "Energy Saving" under switchable graphics. Now I know what that means though! Thanks for the hel... oh, never mind.

Also worth noting that Graphics and Gaming scores in the Windows Experience Index went from 4.1/3.8 with the Intel chip to 5.9/5.3 with the ATI. I'd say that's a sizable difference.
