I was able to mount the cdrivebackup.wim file on the recovery partition using imagex (part of the windows AIK) and copy the c:\swtools\theme folder to the root of my c drive. Running the install.bat with admin privileges installed the Lenovo theme with the lenovo desktop icons, etc.

Also you should be able to grab these files before you install windows 7

Things that did not work:

Wallpapers did not copy over
You can copy the Wallpaper_Patch folder to c:\windows\web\lenovo and they will show up in the windows personalize desktop background application.

The Vista screensaver does not appear to work with windows 7

Here is how to install the Access Connections sidebar gadget- either before upgrading or by mounting the image, copy the Program Files\Windows Sidebar\Gadgets\accessconnections.gadget to your new install, then add the gadget. Works perfectly
