Which of the open source softwares will allow me to set multiple hours of usage for one MAC address. The regular software is not functional enough.

What I need:
Weekdays
On @ 2:30 Off @ 3:30
Weekends
Several hours in the morning, Several hours in the evening

I have a WRT54GL with DD-WRT. It allows you to set up to 10 access restriction policies, and in each policy you can deny WAN access to a list of computers for specified times in specified days of week. Looks like you have to set up several separate rules to accomplish your goal, but it should be doable.
