Scanning Prints & DPI

I have scanned about 200 of 500 b&w images from the 50's. Most are around 2x3"?? and I have been scanning at 48bit color to Tiff @ 800dpi. I end up with 40mb images

Would it be better to scan in grayscale at 1200 dpi to exract even more detail?

Any help with dpi settings would be appreciated, im a little confused with all of the ratio changes and monitor/print differences.
