I included the 256MB only because they can't ship it without any memory.
So, the economics of the memory situation is this: if I were to have Lenovo throw in a stick of memory which would have been useful to me (i.e., a 1GB stick), they wanted something like $170. Heck, I'll be able to purchase (locally) 2GB (1GB x 2 sticks) for somewhere around $220 (or even less).
The "cost" of the Lenovo 256MB memory stick (in this CTO configuration) is, if I recall correctly, $26. So yeah, I will be throwing away (i.e., not using) $26.
Also, if I'm not mistaken, you need to have matching pairs (in terms of size) in order to take advantage of the dual channel memory architecture -- so that really doesn't leave any room for a lone 256MB stick.

As for the video controller, I'm mainly interested in giving this purchase some assured life down the road. For example, Vista, if I recall from my readings, has some heavy video/graphic requirements. I'm also a *nix user, and the various X window enviroments can really tax a machine. Add to that running various emulations (Wine, VM, ...) can bring a machine to its knees.
Having said all that, sure -- it may be an overkill. But I think it a good idea (if one is in the position to do so) to buy towards the higher end when purchasing laptops (versus a desktop -- which are more of a commodity item than laptops are, relatively speaking.)
