Does the T430s use M.2 HDD or 2.5" 7mm drives?

I have added a T430s to my collection of thinkpads. Do these take the M.2 drives or 7mm Standard SSD's? Also do they use the mSata slot on the motherboard like the T420s for an additional hard drive?

There's a 2.5" 7mm bay, which will accept a 7mm hard drive or SSD. There's also a miniPCI slot that accepts a mSATA SSD. If you need a third drive, you can probably replace the optical drive with a hard drive or SSD using a caddy.

Which T4XX did they start using the m.2 hard drives instead of standard SSD's? T440? or was it T450?

T440, but it uses the smaller 2242 (22mm x 42mm) rather than the usual 2280 (22mm x 80mm) size M.2 SSDs.

The T420 was the first to accept a smaller mini SSD in the form of a mSATA, but the T440 and later switched to M.2 SSDs.
