Either CPU will do what you want. 8 GB is likely to do your load. I typically am using 4 GB out of 16 GB and the extra memory is for virtual machines.
I would definitely get a 512 GB SSD drive. It is a pain to change for a bigger one (inevitable with the passage of time) and I have not used less than 512 GB since 2009.
The rest of it looks fine. I use an AC card in my laptop and have an AC router to power it.
i7 9750H hex-core processor, and as was mentioned the 500GB SSD.
The i9 processor would be an option too.
