Either Evo or Pro.
The Pro lines are expensive, but if you want peace of mind in terms of reliability, go for it. The speed increase over the Evo is negligible and not noticeable in real life, so the reason to pay the premium is for reliability and peace of mind, especially if you intend to write on the drive a lot.
I had a 512GB 840 Pro in my T440p for the past 6.5 years but needed more space so I just replaced it with a 1TB 860 Pro and then moved the 512GB 840 Pro to my T61.
I think in the earlier Samsung SSDs (like the 840), there was a more compelling argument to go for the Pro over the Evo, but now not so much.

[Addendum]: We actually wanted to source the 850 Pro "2 GB" version 2.5" SSD sometime after it was discontinued (for its 10 year warranty), which is as rare as a blue moon.
Would have made a great home made portable external SSD storage solution upon its retirement.
But apparently nobody carried any stock of this; it was just held at the main Samsung agency.
So when the 860 Pro came out, the agency immediately stopped selling the 850 Pro "2 GB" version. [/Addendum]
