if i boot the live cd with my xpsp2 hdd in the primary bay, will mint do anything/write anything at all to it as long as i don't run the installer?

It will only mount the partitions. Meaning you can access the partitions if you want to. If you don't want to then just don't click the disk icons on the desktop.
You can use the live linux cd to gain access to files on a drive where Windows is not bootable.
