In the BIOS. I believe some early T410 came with non-Optimus nVidia cards and can only do two LCDs. If that's the case you'd need the advanced dock or there are some USB options as well.

Lenovo Support says the ThinkPad T410 (2518-4JU) does have the NVIDIA discreet graphics card, so two external monitors plus the main LCD should be supported simultaneously. If you have only the Intel graphics, any two of the three can be used, but not all three at once.
If it's not working for you, I would try two things: firstly in the BIOS look for any options relating to graphics/NVIDIA/Optimus/discreet graphics and make sure that discreet graphics are enabled. If disabled, it will fall back to the Intel graphics and only allow two screens. Secondly, you may need to use the NVIDIA Control Panel in Windows rather than the Windows Display settings, so install the latest NVIDIA graphics driver and look at the settings in the NVIDIA application.
