How important is matching memory?

How important is matching memory?

I have been searching for some 1gb pc2700 DDR memory modules, in order to get my machine(s) to the max of 2gb (2 x 1gb). DDR is getting steep, like $20 for 1gb sticks now (well, steep relative to the value of the machines in question :) ).

In the past, and when building newer systems, I always bought new, matched sets of name brand memory. But now, maintaining these older units on the cheap, I have been scouring eBay for deals. The only ones I can seem to find are on single modules usually. If I mix and match, will that be OK?
Maintning and upgrading a few aT4x/R5x on the cheap! :) They are truck mounted in my landscape company. I have some PCs and Android devices as well.
