Can I boot off 2 different OS's using the ultrabay HDD?

Can I boot off 2 different OS's using the ultrabay HDD?
Just wondering if I could boot off of Windows XP using the standard drive, and then if I wanted to use Vista in beta if I could use that on the Ultrabay drive and just switch between the two of them on boot up?
