What does having more GPU ram mean exactly?
is it just like having more memory where the processes will
be faster?

Your computer will be better able to handle graphic related visual tasks like storing images and textures to the video memory and displaying better picture on your on screen monitor.

The more you have, the better the performance would be. A card with 64MB-128MB is fine for office tasks, However at least 256MB-512MB is recommended for the latest games and video/designing related applications like AutoCad etc.
