New T61P and a few questions

Heya, I picked up a T61P last week.

2.0GHz
2GB RAM
120GB HDD
15" WXSGA+ LCD
Vista Business

So I have a few questions. As I type this, I am making a set of recovery media. These discs get me back to exactly where I was the first time I powered on the new machine, correct?

There is a ton of bloatware on this thing, more than I expected. I don't want to go uninstalling stuff until I know for sure I can get back to where I started. The Norton crap is the first thing I want to drop, along with diskeeper, the Office 07 trialware, etc.

I am an advanced user but silly Vista has got me second guessing everything.
