AFAIK Lenovo doesn't ship any TPs with Vista Ultimate x64, when x64 then only Business on selected models. I believe the answer is no.
T61p 6460-67G; 15,4 WSXGA+ W7P x64, no hairdryer.
T43p 2668-G2G, 14,1 SXGA+, XP Pro, internal hairdryer
T23 2647-9LG, 14,1 SXGA+, XP Pro, no hairdryer

You can order a T61p with Vista Business 64-bit. I just received one. The 32-bit version does not include a 64-bit version - they're treated as separate products.
Apathy is on the rise, but nobody seems to care.

You can call in to customize it with your choice of 64-bit version.

With the man who takes me from my horse, and leads me to a bar."

With $5 and 10 minutes of your time, you can (legally) convert your existing 32 bit to 64 bit since there is one license for both. All you need is one of those 'anytime upgrade' dvds.

The 'short' way:

1. Backup your stuff.
2. Put in the upgrade DVD.
3. Reboot.
4. Initiate install.
5. Do not enter a key when prompted, check the box marked 'do not activate' and click next; when you receive a popup warning, click 'No'.
6. Choose the x64 version of the OS that came with your laptop (so Business 32 > Business 64)
7. Continute the install
8. Call MS to activate it :)

Or, the longer more detailed way.

One always has this option, it depends on the representative you talk to, if the rep has no clue on what you're talking about then simply tell him/her the part number of 64-bit OS of your choice (provided lenovo offers it), it would be added to your order.

i was told by a handful of EPP reps that i couldn't get vista ultimate x64 configured with my T61p.   i even had my inquiry elevated to a supervisor and was still told 'no'.   oh well, i never use recovery media anyway and prefer clean installations so it's not a big deal at this point. :)
