What Thinkpads have these specs-SATA-DDR2 ram-dual core cpu

From what I have read the lowest models that have these specs are T60, R60 or Z61. I am looking to trade up (I have an R51 that my wife would like). the reason I would rather have one of these models with minimum specs is that it would be cheaper to upgrade in the long run than a lower priced model(t4x, r5X). Am I correct in this assumption?

Yes, you are correct; there are no dual-core CPUs on models below the T60, R60, or Z61 (or X60, for that matter).

With Lenovo dropping prices in the Outlet the way they have been, you won't have to spend much for a decent machine these days...go for it...
