Although I am VERY new at this, I have been able to install iATKOS v2.0i on my TP X61 and update to 10.5.3 via Kalyway. I was able to load the new iPhone SDK and it looks like the entire SDK is working fine including the iPhone emulator.
Currently iPhone development is limited to Intel-based Macs with OS 10.5.3 and above so it's fantastic to be able to learn about this hot new development environment on a Thinkpad. What makes it great is that the iPhone SDK is completely self-contained with all of the necessary tools.
I also was able to get it to dual boot with Vista using command line instructions from this video along with a Vista recovery disk:

Thanks for all of the great info on this and other forums. I can't believe I was actually able to make this work.
The only problem that I am having is that I can only get Leopard to boot in Safe Boot mode ("-x" command). Otherwise I get the "You need to restart your computer" message. I'm pretty sure it's an issue with a video driver or something but I'm not proficient enough with manipulating kexts.
