whats the diffrence with 240, 240x, 240z

The 240 uses Pentium II Celeron chips with a max of 320MB ram (64 + 256).
The 240X used Pentium III Celerons with one model using a Pentium III chip
all with a max of 256MB ram. The usual amount of ram in the US is 192MB (64 + 128).
Some have gotten 256MB of ram with motherboard modification.
The 240Z is a Japanese product, it has a cheaper brother over there called the i1124 (in gray plastic).
They both have 1024X768 screen resolution with 4MB of video ram while all other models, both here and there,
have only an 800X600 resolution with 2MB of video ram.
The 240Z has an ethernet port (and a speed-step Pentium III in the top model), while the i1124
only has a dummy ethernet slot.
The other features are identical between all models.
There is/was a 192MB chip only available in Japan that allowed their X and Z models to have 256MB
total ram without motherborad modification (64 + 192). Remember all models have 64MB soldered onto the
motherboard.
That should just about cover it, except they're all a pain when it comes to hard drive and CD implemention!

I heard that not all models of the 240Z have XGA displays, some seem to only have SVGA.

240 has max. memory size of 320mb (older intel chip which can manage bigger memory capacity)
240x has max. memory size of 256mb (newer? or I should say more mobile intel chip which handles less memory)

The memory in the 240x und 240z models runs at 100 MHz, whereas the 240 only uses 66 MHz.
I assume that's the reason why the newer models can not address the same amount of memory.
