The X60T CDs most likely contain XP Tablet Edition. So, the question comes down to ... can you install XP Tablet Edition on a non-tablet laptop. Honestly I do not know the answer to that question, but if you want a real set of XP Pro X60 CDs send me a PM.

Yes, they will work in an X60 (I tried it some time ago).

As Harryc said, they will install a Tablet Edition of XP which certainly works in a non-tablet X60. But you simply has no way to use the tablet feature.
