"Dual channel" memory actually refers to how the memory is used by the motherboard. It is used to increase the bandwidth between the memory controller and the memory modules.

To run memory in dual channel the memory modules have to be of the same capacity and speed (most motherboards will slow a faster module down as well as match memory timings).

As far as a laptop goes, having memory run in dual channel is almost the only thing you can do. Your other option is to buy new memory with lower latency/timing.
