I saw a T60 9 cell battery at batteryedge.com with a 6600 mAh rating and a genuine Lenovo on Ebay rated at 7800 mAh. Is that the main difference between the off brands and the genuine?

Genuine batteries have more safety features built in. The contacts are better quality and usually the cells themselves are better. There are aftermarket that are decent quality but it's hit or miss whether you get a good one or a bad one.
