Should I use NVMe-to-SATA adapters?

I'm looking to buy a couple of SATA SSDs to make a RAID array for my Thinkpad, preferably Samsung 860 Pro SSDs with at least 2TB capacity each.
But I know how expensive they are and yet I notice that NVMe drives like the 980 Pro are much less expensive, especially with 2TB.

I know you can buy NVMe to SATA adapters but I wonder if thats a good idea to use to make RAID Arrays, in Thinkpads or in computers in general.
There has to be a catch to using NVMe to SATA adapters, right?

M.2 SATA to 2.5' SATA adapters exist, but I've never heard of any adapter that allows one to connect M.2 NVMe SSDs to a SATA port.
