Recently, after watching Youtube videos about Haiku OS, I've been keen to
buy an X301 in particular just to see how low you can go (hardware-wise) to briskly run that operating system.
But since a fully working X301 is hard to come by on Ebay, I thought I'd ask if anyone ever tried
Haiku OS on it for themselves and see what they can tell me.

The X301 has similar hardware to the X200 and T400 (late Core 2 Duo CPU, GM45 chipset). If it works on those, it will probably work on the X301.

- From their websiteThe x86 32-bit release of Haiku will run on a Pentium or better CPU with 384 MiB of RAM (as long as virtual memory is activated), 1.5 GiB of storage space and a VESA compliant video card.
However, for a satisfactory user experience, we recommend at least a Pentium4 with 512 MiB of RAM and 3 GiB of storage space. For compiling Haiku within itself, we recommend using at least 2 GiB of RAM.
I think the X301 will be more than enough to run Haiku OS. You can probably get by quite well on a very lightweight Linux setup on it as well.

I have run Lubuntu on an X300 and X301 since the mid 10s, just installed 24.04 LTS on one of my X301s and it runs very well. I'm not familiar with Haiku but have a pile of X30x machines I could do something with them if it would really help you.
