So this model has the i5-6300u, which according to ark is a vpro-capable cpu. Also the laptop has the vpro sticker on it. But there is no AMT setting anywhere in BIOS, and I've checked and double checked everything. I've heard that even if it was permanently disabled, it should still show, but maybe that's wrong? This was an eBay purchase so unfortunately I don't know the full history.
I used Lenovo Vantage to do updates, and it updated the BIOS to the most recent: 1.49. It did, however, fail on the ME firmware update saying it didn't recognize the sku. I managed to do a successful ME update by running it manually. Also, for some reason Lenovo Vantage refers to my X260 as a Yoga 260. Not sure if that's normal.
During boot, CTRL-P will bring up a brief message saying "Launching the ME Configuration Screen", but nothing launches and it just boots into Windows.
Intel Management and Security Status app says the ME status is Unconfigured
All in all, I'm not sure any of this matters. I don't need AMT functionality, but I'm curious as I've never seen it missing in the BIOS. It's always shown on my other Thinkpads with vpro CPU's.

You didn't miss out on anything.
AMT had known, unpatchable (in hardware) remotely exploitable vulnerablities, so bad that Intel even recommends nuking it from orbit, just to be sure.
Most decent laptop makers provided tools to do so, or at least render it nonfunctional.
On the x260 and likely all later machines, the AMT option in setup dissappears when you set it to "permanently disable AMT"
